La Scia Rezia Bistrot features local, short-supply-chain products: from Valmalenco PGI trout to alpine cheeses, and from artisanal bresaola to mountain herbs. The menu changes with the seasons, because we believe that quality cuisine begins with what the land naturally offers. The dishes that stand the test of time are those that tell a story: handmade buckwheat *pizzoccheri*; *sciatt*—crispy on the outside with a melting, stretchy center; Valtellina bresaola; and Valmalenco trout (a PGI product), prepared according to traditional local recipes.
